Cacao Nib Cookies

Pecan + Cacao nibs + Coconut Oil = Primal Deliciousness!

Ingredients:

  • 1 1/2 cups Pecans
  • 1/2 cup almonds
  • 2 tbsps coconut oil
  • 1/4 cup cacao nibs
  • 1/4 cup coconut flakes
  • 1 egg
  • 4 dates
  • 1/2 tsp stevia
  • 1 tsp baking soda
  • dash of salt
  • 2 tsp pumpkin pie spice


    Preheat oven to 350.  Place nuts and dates in food processor, mix until they form a crumbly resemblance.  Add (liquified) coconut oil, egg, vanilla, baking soda, stevia, pumpkin pie spice & salt to processor and process until a dough is formed.  Remove from the food processor and add cacao nibs + coconut flakes.  Scoop onto cookie sheet and bake for about 15 minutes (until slightly browned).
